Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and break it apart with a wooden spoon. Cook 7-8 minutes, stirring occasionally, until no pink remains.
- Drain any excess liquid from the pan. Add chili powder, cumin, garlic powder, onion powder, salt, paprika, and 2 tablespoons of water. Stir to coat the meat evenly and cook 1-2 minutes more until fragrant.
- While the turkey cooks, warm the rice and beans. Microwave the rice according to package directions. Heat the black beans in a small saucepan over low heat for 3-4 minutes, or microwave for 90 seconds.
- Set out all toppings — corn, cheese, sour cream, salsa, avocado, and any extras — in small bowls so everyone can build their own.
- Scoop rice into bowls first, then add the seasoned turkey. For toddlers, keep the components separate on the plate so nothing is touching. Let everyone add their own toppings from there.
